Mardi Gras Cooking in Northern Nevada

It's Fat Tuesday and while many think they need to head south to New Orleans to celebrate, think again. There is some down home Southern Cooking right here in Northern Nevada. In fact, Jazz A Louisiana Kitchen at Legends in Sparks prides itself on setting just the right atmosphere and just the right table for that.

"The real thing that sets our food apart is its authenticity," says owner Vic Allred. "Chef Paul Prudhomme really helped put Southern cooking on the map and our first chef was Chef Tony who studied under Chef Paul."

The food is all cooked to order and Allred says the real key is the spices. Not just the ones you use but how you use them.

"Most Southern food starts with what we call the 'holy trinity' of celery, onions and red pepper. You spice that and then add your stock or your meat for whatever you are making and you layer in spice on that. And then at the end you add a little and so it comes out so smooth and full of flavor. A lot of people think if you just add cayenne pepper, that's it but there is so much more to it than that."

Of course at Jazz you are also surrounded by remnants of New Orleans from live jazz to authentic artwork. And they serve it all up every day of the year.
