Local Chefs Offer Diabetic Menus for Fundraiser

Local chefs have come up with diabetic friendly menus - all part of a fine dining fundraiser for Diabetes Awareness Month.

Places like Campo have created a healthy version of roasted garlic tomato sauce on top of polenta - while Charlie Palmer offers a sugar-free sweet drink, salad, and steak minus the guilt.

Adele's in Carson City is also taking part with their filet medallions and poached salmon.

Cooking healthy is nothing new to assistant chef Dennis Houge at the Atlantis Casino Resort Spa. His stepson has diabetes, so at Bistro Napa he is offering a stuffed chicken poblano with quinoa and spaghetti squash.

"We still do the baked potatoes with the butter and all that, but we really like to do these things. It's a challenge for the chefs to come up with these ideas for these menus which I think is going to be the future."

These four local restaurants offer four courses for $40 with $10 of that going to the Juvenile Diabetes Research Foundation through November.
